I think for tauren it's currently just some different colored fur, but maybe in WoD those other options will look a little more sickly/undead, if this datamined skin is any indication.

It's based on BASE hp, not overall so in the end it's static as you level where as (I believe) the undead one will scale with things such as AP with better gear thus adding more dps AND healing.
